Moussaka with Roasted Eggplant and Zucchini
The Greek version of lasagne yet with no pasta, and I have upped the vegies to make this a beautiful one pot meal.
It is best eaten the day after where it is amazing and the flavours have developed beautifully, as well as the slices holding their shape perfectly.
A simple recipe that everyone loves.
A good basic biscuit that can be cut into different shapes as they do not expand when cooking, so is perfect for rainy day baking with kids too.
This is a beauty, and a great twist for a party. The beer works perfectly here and gives a new dimension to the lamb, and a refreshing change.
If you like to give your kids fresh fruit, try purchasing a ceramic knife, the steel is what triggers oxidisation, therefore when cutting with a ceramic knife the fruit stays fresh all day.
Ceramic peelers are also available if the fruit requires it.
