Asian Duck and Mango Salad

Happy Chinese New Year!

This is the main dish I served for my last big birthday bash as it is perfect in summer and I adore this combination of Chinese roast duck, mango and a fresh salad with a beautiful roasted hazelnut dressing.

Amazing.

Based on a favourite lunch at the Tipsy Fig in Milton NSW.

Easy to double or triple to serve the masses too.

Chorizo and Peppers with Chickpeas

A great midweek meal full of punchy flavour, just add bread.

It simmers away nicely to develop the flavours like a stew so you can wrap up all the evening chores while it bubbles on the stove.

This is a regular in our house, especially once crazy school routine starts, and it also freezes well so make a good batch of it.

Chewy Muesli Bars

I am asked for this recipe all the time, especially as school kicks off again.

I vary the recipe all the time depending on what dried fruit I have etc. I follow the recipe by weight, substituting some of the seeds with a sprinkle of quinoa and chia seeds, and the golden syrup with some manuka honey etc

Plus I stay on the low weight side of the fruit as I find it too sweet otherwise.

These are delicious!
