Recipe of the Week - Sri Lankan Sweet Potato and Snapper Curry

Based on a recipe by Sri Lankan Flying Fish chef Peter Kuruvita, I love this curry!
Especially as it is served with the sweet potato curry in side bowls, and a lovely piece of grilled snapper with the rice.
 
You can control your own curry sauce, and I can also serve it with a piece of chicken for those who don't eat seafood, or on it's own for vegetarians, which means it is a great dinner party favourite of mine.

In season right now so perfect for a winter warmer.

Jerusalem artichokes have a beautiful, unique, nutty flavour that has always made this soup a standout hit at my gatherings, yet guests can never quite place..

Is always the soup course in any cocktail party for me - I last served them in piccolo take-away coffee cups at a 70th.

Do not confuse them with the usual artichokes, they are more like ginger bulbs and cook like potato.
