New recipe! Clams and chorizo with pearl couscous

This is the other main dish i served at my latest large dinner party, alongisde the Roasted rainbow trout with a tomato citrus dressing, which I posted last week.

This quick and easy dish - clams, or vongole, with chorizo, lemon, wine, garlic, parsley, on a bed of pearl couscous to soak it all up, was a HUGE hit. Even those who weren't an original vongole fan were converted.

Clams are so fast to cook too, so very handy to know a good recipe.

This is based on a Fiona Smith recipe I found in an edition of the NZ Cuisine magazine.
