Tofu Spinach and Nut Stew

My favourite.

It has a great kick to it, the nut butter adds depth and thickens it perfectly, the tofu soaks it all up beautifully - I often give a tub of this when friends are sick or need some cooking support in busy times -the carnivores are always so surprised how good it is!

Everyone always asks me for the recipe right after! -here it is!
