Grilled Scallops with a Coriander and Nut Butter

Scallops are so fresh and delicious right now which inspires so many seafood meals - the easiest, and for me the best, way to enjoy them is grilled with a beautiful butter melting over the top.

This is based on a recipe by the seafood legend Rick Stein.
