Vanilla Biscuits
This biscuit recipe is perfect for kids as they can cut out any shape they like and have fun decorating with coloured icing. The dough gets soft quickly though so make sure you fridge it well and take litte bits at a time to roll out. Everyone likes vanilla as well so suits all tastes.

240g plain flour
170g butter, roughly chopped and softened
120g caster sugar
1 egg
1 tsp Queen’s Vanilla paste or vanilla essence
Icing- icing sugar, food colouring (optional)
With electric beaters, beat the flour, butter, and sugar til fine breadcrumbs.
Beat the egg and vanilla together lightly, then add to the flour mix - beat to soft dough. Cover dough in cling film and refrigerate for 30 minutes
Before the time is up, preheat oven to 160 °C.
Roll out portions of the dough a little a time on lightly floured surface to 5mm thick. With different shaped pastry cutters, cut out and place on baking paper lined trays. The dough becomes soft very quickly once it warms up so try to make the shapes quickly. Fridge again if necessary.
Bake10-15 minutes, til lightly golden underneath, cool on trays.
Icing- combine icing sugar with 1-2 tbsp water, mix to a thick paste. Add few drops food colouring here if desired.
With plain nozzle on piping bag, drizzle decorations over biscuits, e.g. zigzag.
Let set before packing.
Will keep airtight 1 month.
