A family favourite and one I love to make. The kofte are easy to prepare, quick to cook and I can add so many different fresh side dishes, salads and sauces to make it fun and interesting each time.
Make a big batch of the kofte spices and its even quicker next time.

For 500g lamb mince-
Kofte spice mixture –
2 tsp ground cumin
2 tsp ground coriander
2 tsp sweet paprika
1 tsp cinnamon
1 ½ tsp salt
½ tsp ground black pepper
Optional – ½ tsp to 1 tsp cayenne or hot paprika
Add 1 grated eschalot or ½ brown onion
¼ cup dried breadcrumbs
2 cloved minced garlic
Mix all the ingredients together well with your hands preferably as you can feel when the mixture is well mixed and comes together to form the kofte.
I use about 1 ½ tbsp per kofte and form into the kofte shapes – I don’t bother skewering, I like to cook them like sausages in a medium frypan til nice and browned on each side ready to place in a pita bread, or on the side with fresh iceberg salad, tomato, cucumber.. couscous, with natural yoghurt or hummus, lots of fresh herbs…go for it.
