Kaffir Salmon with Grilled Limes
A quick, wonderful midweek meal for 2 or more people –halve, double, triple the recipe to suit as many as you like. The simple idea of kaffir limes adds so much punch to the dish, and the grilled limes become caramelised and juicy.

4 kaffir lime leaves, shredded
2 tbsp lime juice
2 tsp grated ginger
2 tsp sesame oil
2 tsp chilli oil (optional)
4 pieces of salmon
4 limes halved
Combine lime leaves, lime juice, ginger, sesame oil, and chilli oil if using, - pour over the salmon in a non – reactive dish. Allow to marinate for 10 minutes.
Place salmon on a preheated grill, skin side down first, and the limes in same pan flesh side down, and cook the salmon for 1 minute each side or until cooked to your liking, depending how thick the fish is. Pay attention to the limes and remove from the heat when nicely caramelised.
Serve with some rice, or noodles, and Asian greens.
