Based on Jamie Oliver's Botham Burger Recipe.

The unusual addition of coriander and cumin seeds to add a hint of fragrant flavour, combined with the tart gherkins just works here. The trick of adding the diced gherkin in the patties (Jamie O does not do this) is from my friend Kylie in Freshwater, Sydney – served for lunch to a crowd and cooked on the BBQ, I had to ask her what made them different yet so yum, this was it! They also helped keep the burgers moist. Thank-you Kylie McFarlane!

500g minced beef
1 red onion, very finely chopped
2 eggs
1 to 2 cups fresh bread crumbs
1 tbsp coriander seeds, 1 tsp cumin seeds crushed
2 tsp Dijon mustard
½ cup gherkins, finely diced
Salt and freshly ground black pepper

Preheat oven to 180°C or have a BBQ or fry pan at the ready.

Mix all the ingredients together, using enough bread crumbs to bind the mixture.

Divide into patties any size you like – a mix for adults and kids.

Place in the oven and roast for 10 - 25 minutes depending on the size, or BBQ/fry ‘til cooked to your liking.

Serve with a griddled bun, beetroot, tomato, lettuce, cheese, avocado, cucumber, tomato sauce, chutney.. eggplant chutney..whatever combination you like!

Makes 6 medium patties, 4 large
