Boxing day buttermilk pancakes

The actual title for these is "Petey Boobaas Boxing Day Buttermilk Pancakes". This is the nickname our mutual Granmary gave all of us grandchildren - Boobaas. My mum called my children this too, and I imagine I will as well! Love it.

My NZ family passed on their favourite recipes to me as a gift for my 50th birthday - a perfect present for me!

This makes a wonderful big batch for feeding the troupe, I can see why it's a traditional post Christmas cook up. They are fluffy and delicious, plus I love how super easy the recipe is, no seperating eggs etc. Too good!

4 eggs
1/2 cup canola oil/vegetable oil or light olive oil
600ml buttermilk
4 tbsp of brown sugar
1 tsp of baking soda
4 tsp of baking powder
Approx 3 cups of plain flour 

In a large bowl, beat eggs and oil together while adding the buttermilk.
Add the sugar, baking soda, baking powder, and flour. Mix carefully with a whisk til smooth - do not overmix.
Check the flour amount - you want to add enough until mixture becomes quite thick.
Meanwhile heat a pan to medium so as not to burn pancakes.
As they are quite thick they might need flipping 3-4 times to avoid burning.
Adding blueberries to the mix can go down very well!
Serve with lashings of real maple syrup, sliced bananas, cream, bacon etc.
Makes around 24, serves 8-12
