Apple Fritters for a Junior Cook

This is a great recipe for first time junior cooks – and is the first recipe my daughter followed all by herself. They are like little pikelets with fresh grated apple and delicious with double cream or ice cream.

½ cup plain flour
A dash of salt
2 tsp sugar
1 egg
½ cup milk
2 of your favourite apples* (pink lady, granny smith etc)
*For a variation, you can use 2 chopped bananas instead.

Sift flour, salt and sugar into a large mixing bowl.
In a small bowl or cup, mix the egg and milk together with a fork.
Pour the egg mixture into the flour mix – stir well until there are no lumpbs.
Peel and grate the apples – they will brown quickly so do this just before mixing. Stir the grated apple into the batter mix.
Heat a frypan on medium heat.
Lightly grease with a some butter – you can put a large cold cube of butter on the end of a fork and rub it all over, or drop a dollop in and stir the frypan around til the butter covers the bottom.
Drop large spoonfuls of batter in the pan – 3 at a time or so.
When bubbles show on the top, flip them over and cook til golden.
Sprinkle with sugar, serve with double cream or ice cream.
Makes 8 – 10 fritters depending on their size.
